After a few discussions with various clients over the last week or so, I’ve decided to clarify something about processed meats.
The chemicals used in curing and preserving some processed meats are what cause Cancer, not the meats themselves.
These meats are the ones that come in pre-sealed packs that last forever in your refrigerator.
Not FOREVER, but way longer than meat should last.
However, if you get bacon straight off the pork belly from the butcher (you know, when they slice it in front of you), or sausages made at a butchers, or even a pig farm, you are pretty much guaranteed to be safe because they haven’t had any chemicals added to preserve them.
At worst they’ll be salted or smoked.
So you don’t have to give up your bacon roll or sausage sandwich, just get your meat from a decent source.
